Menu Plan Monday, 4/2

We have just over 3 weeks before we head to the U.S. for 6 weeks, so we are definitely at the point that we are eating whatever is in the house.  Whenever we leave for an extended period of time, we try to empty our fridge and freezer.  During our 2nd year in China we came back from a summer in the U.S. to find out that the plug our refrigerator was plugged into went out at some point over the summer, and everything we had in the fridge and freezer had completely spoiled and was growing maggots!!!  Ever since that summer, we do all we can to empty everything out before we go!
