A favorite freezer meal of ours are freezer burritos. This recipe makes approximately 20 burritos, and can be customized to your taste and diet.
Ingredients:
20 flour tortillas (I used 8″ tortillas)
2 pounds ground beef
2 packages of your favorite taco seasoning
2 cans of refried beans
1 1/2 cups of shredded cheese
1 green pepper
1 red pepper
1 yellow pepper
2 tablespoons of olive oil
Start by dicing your peppers and sauteing in a little olive oil until they are soft.
While you are doing that, brown your ground beef, drain any fat, and add in the taco seasoning. After the meat is seasoned, add in the refried beans.
Mix in the shredded cheese and sauteed peppers.
- use ground turkey instead of beef;
- add more or less meat, beans or cheese;
- use any flavor of cheese that you prefer;
- use spicy taco seasoning or mild;
- add an onion;
- use any color of peppers that you like;
- add in black beans.

Another favorite is Pepperoni Rolls. The prep is a little more, though, and the kids eat them FAST! I do pizza sauce and apple sauce in big batches and breakfast sausage frozen. I will often make extra pizza, cook it, and then freeze it for a quick meal or Matt's evening snack. When I make ziti or lasagna I make 2 — 1 to eat and 1 to freeze. When I make meatloaf, I do 3-4 depending on how much ground beef we can get at the store. I always make 2-3 times a meal of chili and freeze the extra. Hope this helps some! We always have a few things to pull out for a quick meal.

thanks Stacy, I appreciate your links. We live in China though, so its hard to get some of the things you make. Thats why its easier to follow Michelle's ideas! The things she uses we can also get (for the most part) in our city as well! My wife and I both like this blog, as we are those who spend a lot of time trying to figure what to feed our kids!
