Menu Plan Monday 1/23

This is one of those weeks that living on a budget and doing regular freezer cooking go hand in hand.  It’s the end of the month and I did my finance check yesterday and saw that we are going to be really tight this week on finances.  So, I looked at the six-week rotation of meals I’ve been working on and chose a menu for the week that I already have a lot of the meals in the freezer.  After putting the meals into my Plan to Eat Planner, adjusted the shopping list to what I need, I only need to buy milk, eggs, cereal, bread, sausage, rice, and some fruit.  So, I’m taking more out of the freezer than putting into it, but it sure does make a busy week a little easier.

Monday
Breakfast: cereal, fruit
Lunch: Southwest Rollups, rice, broccoli
Dinner: pb&j; (*Dinner Freezer meal), apples, cheese
Tuesday
Breakfast: pancakes (from the freezer), fruit
Lunch:  vegetable soup (from the freezer), cheese toast
Dinner:  pb&j;, apples, cheese
Wednesday
Breakfast: pancakes (from the freezer), fruit
Lunch: Potatoes & Sausage (potatoes already cut and seasoned from the freezer), peas
Dinner: bean & cheese quesadillas (from the freezer), fruit

Thursday
Breakfast:  cereal, fruit
Lunch:   frittatawaffles (*Breakfast Freezer meal)
Dinner:  Ham, Broccoli, Cheddar Rolls (from the freezer), fruit
Friday
Breakfast:  Baked Oatmeal (*Breakfast Freezer meal), fruit
Lunch: chicken nuggets, peas, cheese
Dinner:  Rehearsal Dinner

Saturday
Breakfast: Baked Oatmeal, fruit 
Lunch:  leftovers
Dinner:  Wedding

Sunday
Breakfast:  cereal, fruit
Lunch:  soup & sandwiches
Dinner:  Family Birthday Dinner

  2. I love how you were willing to go outside the "normal" meal pattern. And, way to go with the freezer meals!! Numerous times I've had big ideas to fill my freezer and quickly fall off. Thanks for sharing!!

  3. Thanks, Kate. I can easily get overwhelmed when I try to fill it up all at once. That's why I have really like batch cooking and putting a little in there every week. It doesn't take long to fill it up!
