These are my thoughts and observations on recipes I’ve tried lately. A lot of these are Lunch Freezer Meals from searching for easy lunch recipes.
Secondhand Turkey
We have a lot of turkeyfrom last week. Dee smoked a huge turkey all day and it turned out great! Since we didn’t need it for our family Thanksgiving dinner, we cut it up and froze all the meat. So I’ve been looking for turkey recipes.
What I liked:
- Easy to make
- Fresh ingredients
- Everybody loved it!
- Omitted the celery (because I hate it)
- Doubled the recipe and it made a lot. We ended up having 2 meals from it, so I could have just stuck to the original amounts.
Ham (or Turkey), Broccoli, and Cheddar Roll
This is the result of looking for ways to use all our turkey and more lunch recipes that are easy to freeze.
What I liked:
- Easy to make and multiply (I quadrupled the recipe.)
- Few and simple ingredients
- Feeds a lot. For a lighter lunch meal, one roll fed all of us fine.
- Good for the freezer
- Used my normal pizza dough recipe instead of canned.
- Substituted turkey for the ham.
Two for today & two for the freezer
French Toast Sticks
This is a recipe from Money Saving Mom’s ebook from a few years ago, Simply Centsible Breakfasts. I use it all the time, but this is the first time I have tried the French Toast sticks.
What I liked:
- Easy to make
- Kids loved them! I finally had to cut them off because they wouldn’t stop eating.
- Easy to freeze and reheat
Frozen Peanut Butter & Jelly Sandwiches
I have been thinking about doing this just to make things one step easier, but I wasn’t sure if it would turn out ok. I found Amanda’s Cookin and she had some great tips including spreading the peanut butter to the edge of the bread to create a seal for the jelly, spreading a very thin layer of peanut butter before you add a dollop of jelly to the middle, storing them back in the bread bag, and keeping the bag upright in the freezer so the jelly never runs.
- Easy & quick to make lots for the freezer
- Worked fine using Smucker’s Natural Peanut Butter
- Easy to thaw & serve and still tasted great
- Love just pulling these out of the freezer
Update about this recipe: I posted previously that I wanted to do some things different when making this next time. Well, I did and it was much better. I added a can of diced tomatoes, mixed in the shredded cheese with the noodles, and added seasoned bread crumbs and parmesan cheese to the top. It was great, not dry, and more cheesy. I will still probably add more cheese next time.

You really just made a bunch of PBJ's and froze them??? I've never thought about simplifying something so simple, but even though simple, it takes 10 minutes to make them for my 4 kiddos. Great for when you need to pack a lunch to go somewhere!
