A few years ago, some very dear friends, the Kovacs, introduced us to a tradition in their house that has become one in ours. Popcorn Fiesta! Usually on Sundays, after a busy morning at church, coming home to feed the kids quickly and put them down for naps, we have a pretty low key day. And regardless of how small or large a meal we had for lunch, we just don’t have big dinner appetites on Sunday evenings. We like to just snack through the evening. Popcorn Fiesta is perfect for this, easy to prepare, and the kids love, love, love it! Dee has made it a tradition with the girls to have this every Sunday night camped out in the living room in front of the TV, watching football or basketball. He treasures this time with them.
⅓ cup Popcorn kernels
⅓ cup peanuts
⅓ cup raisins or dried cranberries
1 apple, cut up
4 oz. cheddar or colby jack cheese, cut up into squares
Salt to taste
2 T butter, melted (optional)
Pop popcorn and add all other ingredients and mix.
