
I’ve realized I’m in a different season here with my cooking/meal routine. I had totally revamped things with my old cooking plan. But during the summer, Dee is home more and the schedule just feels a little more relaxed. And it has hit me that with Karis starting school next month, we need to go back to a traditional eating schedule anyway. I’m hoping to keep going with my freezer cooking and make it as efficient as possible without feeling bogged down by cooking every day.

Monday
Breakfast: cereal, fruit
Lunch: pb & j, cheese, apples
Dinner: Mexican Stuffed Shells, Cucumbers with Ranch dressing, Italian cheese bread
Tuesday
Breakfast: pancakes (from the freezer), fruit
Lunch: pb & j, cheese, apples
Dinner: Eggplant Casserole (*Dinner Freezer Meal), potatoes, peas
Wednesday
Breakfast: pancakes (from the freezer), fruit
Lunch: Mini Pizza Meatloaves (*Lunch Freezer Meal), fruit
Dinner: tilapia, rice, broccoli
Thursday
Breakfast: granola, fruit
Lunch: Mac & Cheese Cups (*Lunch Freezer Meal), green beans
Dinner: waffles (*Breakfast Freezer Meal), frittata
Friday
Breakfast: Baked Egg Cups, fruit
Lunch: chicken nuggets, peas, cheese,
Dinner: pizza (*Dinner Freezer Meal)
Saturday
Breakfast: Apple Muffins, (*Breakfast Freezer Meal) fruit
Lunch: Leftovers
Dinner: out to eat at one of our favorite kid-friendly places
Sunday
Breakfast: pancakes (from the freezer) – **in the car on the way to church
Lunch: soup and sandwiches
Dinner: Popcorn Fiesta

I will be trying the apple muffin recipe. they look delicious!
And my family will enjoy the pizza variation of mini meatloaves (they do get bored with my ‘plain ol’ meatloaf)
The apple muffins are just. so. good! And I made the pizza meatloaves last night and they were great! Now I have to get my kids’ approval, which I don’t think will be hard!
