Be sure to check out my Spring/Summer Six-Week Meal Rotation if you missed it.  This is sort of the end of our full summer.  Dee goes back to work full-time today.  <sigh>  When he’s home, I tend to take “off” with him.  We stay in our pajamas a little longer, eat breakfast a little later, and have a much looser routine.  However, today it is necessary I rise early and get showered and dressed before they all wake up.  And I need a good plan for our activities this week.

Dinner:   Creole Black Beans, rice, cornbread (from the freezer)

Tuesday

Breakfast: cereal, fruit

Lunch: pb & j, cheese, apples

Dinner:  Brown Sugar & Balsamic Pork Chops, rice, green beans

 

Wednesday

Breakfast: cereal, fruit

Lunch: Mini Pizza Meatloaves (from the freezer), broccoli

Dinner: Enchilada Rice (*Dinner Freezer Meal), Cucumbers with Ranch

 

Thursday

Breakfast: granola, fruit

Lunch:  Macaroni & Cheese with Beef (from the freezer), green beans

Dinner: pancakes (*Breakfast Freezer Meal)frittata

 

Friday

Breakfast:  Baked Egg Cups, fruit

Lunch: Ham & Cheese Egg Rolls (*Lunch Freezer Meal), fruit

Dinner: pizza (with dough from the freezer)

 

Saturday

Breakfast: Cinnamon Rolls(*Breakfast Freezer Meal) fruit

Lunch: soup and sandwiches

Dinner:  out to eat at one of our kid-friendly restaurants

 

Sunday

Breakfast: pancakes (from the freezer) – **in the car on the way to church

Lunch: Leftover pizza

Dinner:  Popcorn Fiesta

I’ve realized I’m in a different season here with my cooking/meal routine.  I had totally revamped things with my old cooking plan.  But during the summer, Dee is home more and the schedule just feels a little more relaxed.  And it has hit me that with Karis starting school next month, we need to go back to a traditional eating schedule anyway.  I’m hoping to keep going with my freezer cooking and make it as efficient as possible without feeling bogged down by cooking every day.

Menu Plan Monday, 6/25

I pretty much failed at following the meal plan last week.  I was just talking to Matt last night about it.  I’m not sure if it’s the jetlag, lack of rhythm after being away for 7 weeks, or simply that we came back to an empty fridge and freezer.  It’s probably a combination of all of those things.  I’m hoping for a better week this week!

Breakfast
M/W/F: Granola or Oatmeal (child’s choice), fruit
T/Th: Eggs, bacon, and toast
Saturday: French Toast
Sunday: Ooey-Gooey Cinnamon Buns, Fruit Salad

Lunch
Monday-Friday: The kids eat at school, I eat whatever’s in the fridge, and the hubby eats at work!
Saturday: Sandwiches, Leftovers, or Freezer Burritos
Sunday: Eat Out

Dinner
Monday: Pizza and Veggie Sticks
Tuesday:  BBQ Burgers, Sauteed Mushrooms, French Fries
Wednesday: Chinese Take Out
Thursday: Lasagna and Salad
Friday:  Crockpot Pulled Pork, Baked Beans, Corn on the Cob
Saturday: Taco Night
Sunday: Kai’s 4th Birthday!  Eat out at a restaurant of his choice

Michelle’s Menu Plan, 6/18

I’m so happy to be back and sharing a meal plan with you today!  I’m putting this in writing, but after 7 weeks of traveling in the States, I make no guarantees that I’ll actually follow this plan.  My main goals for the week are to get over jetlag, unpack and put away our 12 suitcases and 600 pounds worth of stuff, and to get the kids on a consistent schedule.  A consistent schedule for them starts with an organized mommy, so here’s my attempt at organization for the week!

Breakfast
M/W/F: Granola or Oatmeal (child’s choice), fruit
T/Th: Eggs, bacon, and toast
Saturday: Waffles
Sunday: French Breakfast Muffins, Fruit Salad

Lunch
Monday-Thursday: The kids eat at school, I eat whatever’s in the fridge, and the hubby eats at work!
Friday: No school — frozen Chinese dumplings, apples, veggie sticks
Saturday: Sandwiches, Leftovers, or Freezer Burritos
Sunday: Eat Out

Dinner
Monday: Taco Night
Tuesday:  Eat Out Chinese
Wednesday: BBQ Burgers, Sauteed Mushrooms, French Fries
Thursday:  Celebrate a little buddy’s birthday at a restaurant
Friday:  Pizza and Veggie Sticks
Saturday: Chicken Parmesan, Salad, Focaccia

Menu Plan Monday – 5/21

 

So, for one reason or another, last week’s meals just didn’t go like I planned.  I just didn’t have the energy for a couple of the new recipes I had planned even though they were super easy.  And we had the benefit of leftovers from our big Mother’s Day lunch at my mom’s.  Hmmmm, how did my mom end up being the one to serve all of us on Mother’s Day?  Just like a mom, isn’t it?  Her work never ends.  (I love you, Mom!!)  So this week is a repeat of some of last week’s meals that I didn’t get around to, then a long holiday weekend.  :)

Oh!!  And did I mention that I get to SEE Michelle today??  We chat online almost every day, but I’m so excited to actually see her and her cuties in person today!!
